Researchers from the University of Córdoba in Spain have developed a model for predicting the growth of Listeria monocytogenes in artisanal cheeses, which will be especially useful to producers that must demonstrate compliance with recently expanded EU regulations for controlling the pathogen in ready-to-eat (RTE) foods.

FDA-Backed Study Shows Aging Raw Milk Cheese Does Not Inactivate Avian Flu, but Low pH Helps

According to a pre-publication version of a study conducted by Cornell University and backed by FDA, aging raw milk cheese may not be effective at eliminating the Highly Pathogenic Avian Influenza H5N1 virus. However, adequate heat treating or pH 5.0 conditions could be effective.
