2019 Sanitary Design Workshop preview: Controlling allergens and pathogens

The 2019 Sanitary Design Workshop will take place on April 2–3 at the Embassy Suites Hotel in Chicago. This event, which focuses on “Equipment & Plant Design for Allergen & Pathogen Control in Low Moisture Foods,” is sponsored and supported by American Bakers Association, AIB International, American Society of Baking, BEMA/Bakery Equipment Manufacturers and Allieds, Food Processing Suppliers Association, National Confectioners Association, National Pasta Association and SNAC International.

Snack Food & Wholesale Bakery is the exclusive media sponsor and supporter of the workshop.

Attendees often include engineers, sanitarians and plant managers from equipment manufacturers, snack and bakery companies, and more.

The Sanitary Design Workshop is a unique educational opportunity presented by experts currently employed in processing facilities. Presenters often include industry leaders from companies like Kellogg Co., PepsiCo, Nestlé and General Mills.

Participants come away with practical and proven approaches to cleaning, sanitary design, equipment layout, and personnel requirements that utilize verifiable, economically sound, and HACCP-supported processes. The workshop includes equipment design demonstrations using photos and prototypes, and the introduction of a process for continuous improvement. Workshop content will include:

  • Equipment design demonstrations using prototypes and photos
  • Case studies reviewing applications in the field
  • Hands-on demonstrations
  • Discussion of what FSMA means for sanitary design
  • The GMA Principles of Design checklist
  • A toolkit for equipment and plant design

Harvin AR will also present a demonstration of augmented reality (AR) to illustrate ways to improve and streamline sanitation and maintenance tasks in snack, bakery and other food facilities.
