Food Safety Five Ep. 17: Strengthening Food Safety for Food-Allergic Consumers
This episode of Food Safety Five covers a new study that identified “hidden” food allergens that are frequently implicated in food-induced anaphylaxis, but are not regulated as major allergens in the EU, and recommended four allergens for inclusion in the EU list for the mandatory labeling of foods. Also discussed is an amendment made to U.S. Department of Agriculture Food Safety and Inspection Service (USDA-FSIS) allergen verification protocols for inspectors, which now include gluten.
