In October, the Department of Food Science in Penn State’s College of Agricultural Sciences will offer “Food Safety and Sanitation for Food Manufacturers,” a two-and-a-half-day workshop designed to teach participants the essentials of sanitation practices that prevent food contamination in commercial food facilities.

The in-person course will take place from 8 A.M. to 12 P.M. on October 13–15, 2026 at the Penn State Main Campus Rodney A. Erickson Food Science Building, located on Curtin and Bigler Roads in State College, Pennsylvania.

This opportunity is offered to those developing in-house food safety programs who want to enhance their knowledge of the science and technology of cleaning, sanitizing, and pest control.

Lectures and lab sessions focus on control of pathogenic and spoilage microorganisms, plant and equipment design, safe handling of chemical products, allergen control, and educational strategies to get workers involved and committed to a food safety plan.

Alternatively, Penn State Extension offers an online, asynchronous course for participants. Through educational videos, detailed readings, graphics and interactive questions, this course equips participants with key topics, including food microbiology, sanitary design of facilities and equipment, employee hygiene practices, and effective cleaning and sanitizing procedures.

This online course is self-paced and includes 12 sections, each with a short quiz. The course will last approximately 12 hours. Participants must score 80 percent or higher on the quizzes to pass the course and receive a certificate of completion.

Either course provides credits toward Penn State's Food Science Certificate program.

Preregistration is required for the in-person course, available here.
