Food Safety Summit Q&A with Mark Duffy, Universal Pure (Part 1)

In this video interview, Andy Hanacek, editor-in-chief of The National Provisioner, discusses food safety trends and HPP with Mark Duffy, CEO of Universal Pure, at the 2018 Food Safety Summit in Rosemont, Ill. Duffy explains how companies are recognizing high-pressure processing as a technology that can help them deliver on a commitment to food safety, and how there is interest in utilizing the technology for clean label processing and shelf-life extension. Also covered is what Universal Pure considers the major challenge of HPP technology.
