Smart Data Driven Decisions: Microbial Risks in the Production Environment

Wednesday, May 14; 11:00am - 11:30am

As recent events have highlighted once more, managing microbial risks in a food production environment is key to manufacturing safe food. Despite employing best practices, environmental pathogens and spoilers still manage to cause havoc for the goods produced. By leveraging data models that complement traditional tools for supporting root cause analysis, a risk diffusion model allows us to look ahead: given the situation we observe today, what is our situation tomorrow going to be? This allows for proactive adaptation, improved interventions in transmission chains, and more efficient micro-organism detection program, to reduce the microbial risk of the product.

Pathogen Contaminated Gloves: Your Zone 1 Food Safety and Legal Vulnerability

Wednesday, May 14; 12:30pm - 1:00pm

Are your gloves a source of microbial contamination and a potential legal liability?

Recent peer reviewed research found concerning microbial contamination on 26 brands of FDA compliant gloves, including Listeria monocytogenes, Bacillus cereus and B. anthracis. Unlike other Zone 1 Food Contact Surfaces, disposable gloves are not tested for pathogen contamination despite often being the last point of contact with food.

This creates a critical food safety and liability gap—if contaminated gloves introduce pathogens onto food, companies not only compromise food safety programs, but risk legal and regulatory consequences.

It’s time to address this overlooked risk.

How to Maintain a Low Moisture Thermal Process Between Validations

Thursday, May 15; 1:00pm - 1:30pm

The importance of a rigorous, science-based thermal lethality validation is widely recognized and understood in the food industry. Among a wide variety of product types and thermal processes, low moisture foods are among the most difficult to validate. If you’re a low moisture food processor who’s done their due diligence, found a good validation team, and has a report in-hand demonstrating a validated 5-log pathogen kill, congratulations! That’s no small task. So that’s it. You’re done now…right? Not so much, maintaining a validated thermal process is just as important as getting it validated in the first place. In this presentation, we’ll answer important questions on how to keep your thermal process in fighting shape. What kind of calibrations should we do? What’s temperature mapping? When should we revalidate?
