Penny Martin is a Senior Principal Scientist in Ingredient Science at Mars Snacking, with almost 4 decades of experience applying color science to food and confectionery products. Prior to joining Mars Wrigley over 14 years ago, Penny held roles in color science and applications for Sensient Colors. She brings deep expertise in the scientific, regulatory, and application of food colorants. Penny holds BS and MS degrees from North Dakota State University and a graduate Certificate in International Food Law from Michigan State University.
