The 2018 Sanitary Design Workshop will take place March 20–21 at the Embassy Suites in Chicago. This annual event focuses on “Equipment & Plant Design for Allergen & Pathogen Control in Low Moisture Foods,” with leaders from top snack and bakery companies like Kellogg Co., PepsiCo, General Mills and Nestlé illustrating cutting-edge best practices related to sanitary design in a unique, hands-on workshop environment. Other industry-leading companies presenting at the 2018 workshop include Commercial Food Sanitation, Mead & Hunt, Kollmorgen, KOFAB and Indue. Session topics will include discussion of concepts like the sanitary design principles of equipment, facilities and construction projects, as well as understanding and managing risk and development of a Sanitation Standard Operating Procedure (SSOP).
The engineers, sanitarians, plant managers and others attending the event learn about practical and proven approaches to cleaning, sanitary design, equipment layout and personnel requirements that utilize verifiable, economically sound and HACCP-supported processes. The workshop includes equipment design demonstrations using photos and prototypes, and introduces a process for continuous improvement.
